Taste the Difference

Our chickens are raised out on pasture, where they get to do what they love. They hunt all day for bugs, eat grasses and also enjoy lounging in the sunshine. We give our birds locally sourced, certified organic feed daily to ensure they are getting the best nutrition and they are raised humanely. It is our belief that raising happy, healthy animals produces great quality meat. You can taste the difference!

We process our birds as whole birds, packaged for pick up. Believe it or not, you can do lots of things with a whole chicken! Either cook the whole bird or cut it into individual pieces for you to cook what you’d like. No matter what you choose, you will not be disappointed in the flavor that a pasture raised chicken brings to the table.

 

Cooking Ideas:

Whole Bird:

It’s easier than you think! If you want to cook the whole bird in one shot, our favorite way is to spatchcock it on our smoker. Follow this super easy recipe that we love!

You need:

  • 5-6 Lbs Whole Chicken

  • Olive Oil

  • 1/4 cup Traeger Chicken Rub

Directions:

  1. preheat grill to 375

  2. Using a sharp knife or meat shears, cut chicken along the backbone on both sides. Remove backbone and flip bird over and press down on the breastbone until it cracks open and bird flattens. By flattening the bird, it will cook evenly.

  3. Put olive oil all over the chicken and then season both sides.

  4. Place chicken directly on grill, breast-side up. Cook until internal temperature reaches 160, roughly 60 minutes.

  5. Remove from grill and let rest for 10 minutes before carving into.


Butchering into cuts:

If you want to cook less of the bird, try butching into the pieces listed below. This gives you the option of cooking only some of the bird and keeping some for a different day. Plus, there’s the bonus of the carcass (bones) that can be made into a nutritious stock that’s great for soups.
